Ingredients

  • Ingredients for about 4-6 portions:
  • 1 1/2 lb boneless, skinless chicken breast
  • 4 eggs, plus 2 tablespoon milk, beaten
  • 1 cup flour
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • cayenne to taste
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • For the sauce:
  • Juice of 2 lemons
  • 1/2 cup good white wine or dry sherry
  • 1 cup vegetable broth or chicken stock
  • 4 tablespoon cold butter, cut in cubes
  • 1 tablespoon chopped Italian parsley
  • salt and fresh ground black pepper to taste

Instructions

Step 1

Add 1 cup flour, 1 tablespoon salt, 1 teaspoon black pepper and some cayenne in a baking plate. Use a fork to mix up. Set aside.

Step 2

Add 4 eggs and 2 tablespoon milk in a big mixing bowl. Whisk well. Set aside.

Step 3

Put the chicken breast in the seasoned flour, let coated with the flour well. Transfer the chicken breast in the egg mixture. Let coated with the egg mixture well.

Step 4

Add the cold butter in a pan over high heat. When the butter is melted, put the chicken breast in the pan, turn the heat to medium. Cook 2-3 minutes per side. Remove and set aside.

Step 5

Add the juice of 2 lemons,
1/2 cup good white wine or dry sherry,
and 1 cup vegetable broth or chicken stock in the same pan. Reduce by half. Add the cold butter. Keep moving it until it is melted. Add 1 tablespoon chopped Italian parsley, some salt and fresh ground black pepper. Return the chicken breast in the pan with the sauce. Spoon the sauce on the chicken breast. Cook for 1 minute.

Step 6

Transfer to a serving plate, spoon over the sauce. Enjoy!
