Recipe: Cook Beef Chili Using Pressure Cooker

Ingredients

  • 2 1/2 pounds beef chuck, cut in 1-inch cubes
  • salt and fresh ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 3 cloves garlic chopped
  • 2 tablespoon ancho chili powder
  • 2 teaspoon Spanish paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon chipotle pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1 can (10.5-oz) diced tomatoes with green chilies
  • 1 1/4 cup water
  • 1 tablespoon ground corn chips, optional
  • cilantro and chopped green onions to garnish

Instructions

Step 1

Brown 2 1/2 pounds beef chuck, season with salt and pepper.

Step 2

Saute 1 diced onion and 3 cloves chopped garlic in a pressure cooker. When the diced onion is soft and tender, add 2 tablespoon ancho chili powder,
2 teaspoon Spanish paprika,
1 teaspoon ground cumin,
1/2 teaspoon freshly ground black pepper,
1/2 teaspoon chipotle pepper,
1/4 teaspoon cayenne pepper,
and 1/2 teaspoon dried oregano. Stir and cook for 1 minute.

Step 3

Then add 1 can (10.5-oz) diced tomatoes with green chilies, the browned beef chucks, and 1 1/4 cup water in the pressure cooker. Turn the heat to high. Cool until the little center lid starts to dance. Then turn the heat to low. Cook for 15 minutes. After that, let sit for 10 minutes. Then use a tong to lift the little center lid in order to release the pressure. If there is no pressure coming out, you are safe to unlock the pressure cooker.

Step 4

Transfer the food to a serving plate. Garnished with cilantro and chopped green onions.
