Recipe: Cotechino and Beans

Ingredients

  • 1 cotechino
  • 1 pot of simmering lentils or beans
  • My soup contained:
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 pound cranberry beans
  • 1 quart chicken broth
  • water as needed
  • 1 bay leaf
  • 1 teaspoon dried Italian herbs
  • small sprig rosemary and thyme
  • 1 bunch Swiss chard, trimmed and torn
  • salt and fresh ground black pepper to taste

Instructions

Step 1

Add 1 tablespoon olive oil and 1 chopped onion in a pot over medium heat.

Step 2

When the onion is soften,
add 1 quart chicken broth,
water as needed,
1 bay leaf,
and 1 teaspoon dried Italian herbs.

Step 3

Poke some holes in the cotechino. Put it in the pot. Add some small sprig rosemary and thyme. Bring it to a simmer, skim the foam on the top. Simmer on low heat for about 1 hour.

Step 4

Remove the cotechino, take off the string, slice the cotechino. Add some olive oil on a pan over a heat, cook the cotechino slices.

Step 5

Transfer the beans mixture in a serving bowl. drizzle some olive oil. Put the cotechino slices on top. Enjoy!
