Recipe: Spicy Thai-style Steak on Rice Noodle Salad

Ingredients

  • 1 skirt steak (about a 1 1/4lb)
  • 1/4 tsp chipotle chili powder
  • 1 tsp shiracha or other hot sauce
  • 1 tsp red curry powder
  • 2 tbl fish sauce
  • 8 oz. rice noodles
  • 1 bunch mint
  • 2 cups shredded cabbage
  • 3/4 cup grated carrot
  • peanut dressing to coat - about a cup
  • chopped peanuts to garnish

Instructions

Step 1

Add 1 tsp shiracha or other hot sauce,
1/4 tsp chipotle chili powder,
1 tsp red curry powder,
and 2 tbl fish sauce into a big mixing bowl. Mix well.

Step 2

Cut the skirt steak into 6 piecies. Put them in the bowl with the wet rub.
Toss well. Refrigerate for at least 30 minutes, overnight is good.

Step 3

Add 1 tbsp olive oil in a pan over a heat. When the pan is hot,
put the Steak Pieces in. Sear for 4 minutes per side.
Turn the heat down. Add 1/4 cup water.

Step 4

Add 8 oz. rice noodles into a big bowl. Cover with hot water for 8 minutes.
Drain them well.

Step 5

Roll the mint leaves, then dice them.

Step 6

Add the peanut sauce in the noodle. Toss well.
Add 3/4 cup grated carrot, and 2 cups shredded cabbage, Toss well.

Step 7

Slice the steak against the grain. Put the noodle on a serving plate, topped with the steak slices and the mint leaves.
