Recipe: Spinach and Sausage Soup
Ingredients
- 1/2 lb spicy smoked sausage, preferably adouille
- 2 1/2 cups chicken stock
- 1 can white beans, such as great white northern or cannelini
- 1 14.5 oz can of diced tomatoes
- cajun seasoning to taste
- One bag of baby spinach
Instructions
Step 1
Slice the sausage. Heat some butter or olive oil in a large pot, and saute the sausage until it's nicely browned.
Step 2
Add the chicken stock along with the tomatoes and their juices. Bring to a simmer.
Step 3
Add spinach and cook until tender, 3-5 minutes
Step 4
Drain the can of white beans and add them to the soup.
Step 5
Season with Cajun seasoning to taste.
