Recipe: Veggies Chicken
Ingredients
- 8-10 chicken thighs (about 2 pounds)
- 1 cup orange juice
- 1/3 cup brown sugar
- 1/3 cup rice vinegar
- 1/8 cup fish sauce
- 1 tbl soy sauce
- 1 tbl grated ginger
- 1 bunch green onions
- 1 jalapeno pepper
- 1 bell pepper
- 4 oz sugar snap peas, or snow peas
- 4 cloves garlic
- 1 tsp hot chili flakes
- 2 tbl orange zest
- cilantro to garnish
Instructions
Step 1
Slice 1 jalapeno pepper and 1 bell pepper.Take 1 bunch green onions, cut it into half (white part and green part).
slice the white part and green part thin, make sure they are separated.
Step 2
Drain the Marinaded chicken mixture. Keep the marinade sauce, we will need the later.Add some oil in a pan over medium heat. When the oil is hot, dump the chicken mixture in the pan.
Cook for a few minutes, stir constantly.
Step 3
Then push the chicken from centre to the sides of the pan. Cook for another 6 minute to reduce the sauce.Then toss the chicken around for another 6 minutes.
Step 4
Add the chopped onion (white part), orange zest, and some diced garlic in the centre of the pan.Saute for 2-3 minutes. Then add half of the reserved marinade sauce.
Reduce that for 5 minutes or until slightly thickened, then add veggies and simmer for 3-4 minutes.
Step 5
Then top that with the chopped green onion (green part). Turn off the heat.
