Did you ever have a couple of days like that? Well, here we are on Monday night at the beginning of another week and we are just having a simple dinner, but I have a bit of a yen for dessert. I also am tired, so I want something quick and easy. On top of that, I have pledged to rotate out some of the things in my can rotator and make room for things that make more sense. So this is what I came up with, fruit cocktail cobbler. This recipe is similar to the "Dump Cake" that I made about three years ago, but this requires only three ingredients, one of which comes out of the can rotator and it is super simple to make. In my opinion, this cobbler is tastier than the dump cake. It has a cleaner finish and no back taste whatsoever. I think it is because it does not have the pie filling in it, but that's just my opinion. It is just something different and another recipe to put in your box or book that you can pull out when you have a yen for a sweet but don't have the time or inclination to make a big dessert from scratch. I even made it super easy by making it in a foil pan. When it's gone we just toss the pan, no fuss, no muss, EASY! Give this one a try when you have a chance. You probably have what you need on the shelf and in the fridge now! I served mine with some fresh whipped cream, but you could easily serve this with a scoop of ice cream or nothing at all. Have the leftovers for breakfast with a splash of milk. This won't last long and your family will love it! Happy Eating!
