Recipe: Scalloped Potatoes

Ingredients

  • 8 to 10 pounds of russets
  • 1/2 stick sweet unsalted butter
  • 2 pounds cheddar cheese
  • 1 quart nonfat half and half
  • pepper to taste

Instructions

Step 1

Peel and slice 8 to 10 pounds of russets. Stack the slices in one layer on a baking pan, make sure there is no space between slices. Drizzle salt and pepper.

Step 2

Split the butter into pieces. Add butter pieces and 2 pounds cheddar cheese on the top of the cheese layer. Built another layer of potato slices. Repeat this until you get 6 layers of potato slices. Make sure the last layer of potato is topped with butter pieces and cheese. Find a good corner of the pan, pour in 1 quart nonfat half and half.

Step 3

Cook at 375F in an oven for 1 1/2 hour. Cook for another 50 minutes at 300F.
